Otterbein holiday dinner calls for hundreds of pounds of food

The holidays are a time for food, friends and fun. Festivities at Otterbein are no exception and the chefs in the Cardinal’s Nest prepare a feast of massive proportions. Check out the mass quantities of food that are being brought in for Otterbein’s holiday dinner, tonight in the Cardinal’s Nest at 6 p.m., after the annual Tree Lighting Ceremony at 5:30 p.m. According to Martin Brennan, the executive chef for Bon Appetit Management Company at Otterbein, his staff will have on hand: Approximately 200 pounds of top sirloin Approximately 120 pounds of roasted chicken Approximately 200 pounds of red skin potatoes Approximately 150 pounds of sweet potatoes Approximately 40 pounds of green beans It will take about 25 staff members to keep the event running smoothly, according to Brennan.
